This Apple Leek Salad is the perfect way to enjoy the flavors of fall! It’s loaded with sweet apples, crisp leeks, and a homemade dressing. It’s a delicious and healthy side dish that’s sure to be a hit at any dinner table.
Recipe – step by step
Cut the leek into thin slices and add them to a mixing bowl. Cut the apple into small pieces and add them to the mixing bowl.
You can cut everything by hand, but this takes a bit longer than if you have a food processor that can automatically cut for you. I’ve used a sliding disc that slides 2mm thick for the leek.
For the apples, I first removed the apple’s skin and core and then put the entire apple through a sliding disc of 4mm. I then stacked half of the apple slices on top of each other to cut them with a knife (you can see the result in the first picture below). It was super fast to cut my leek and apples by doing it like this.
How do you cut leek for a salad?
Cut off the tip with the stringy roots. Also, cut off the green leaves. If the leek’s outside layer seems too bruised, then you can also remove the outer layer. Your leek is now ready to cut into thin slices. You can also first cut your leek in half lengthwise.
For the dressing, take a small cup, mix the mayonnaise with yogurt and lemon juice, and spice this with salt and pepper. You can also experiment with which yogurt you use—regular or plant-based yogurt. I’ve used coconut yogurt when I don’t have regular yogurt, and it didn’t taste bad!
Mix the apple, leek, and dressing together in a large bowl and cool in the fridge. This salad is most delicious when served cold.
